Hi guys! Have I told you about this new drink that I'm totally addicted to? The Secret To Perfect Sugar-free Pancakes

Sounds crazy right?  Like it can't be done?  Like there must be hidden sugar in here somewhere?  Like there is a catch? The way I see it-When there's a will, there's a way. Who's ready for a sweet treat that's better then chocolate cake and half the calories?  I knew I'd catch your eye!! It's gluten-free, vegan, dairy-free, Paleo and truly amazing!! Chocolate Orange Chia Seed Pudding

Total: 15 minutes, plus 4 hours chilling 4 servings As chia seeds soak in non dairy milk, they create a tapioca-like pudding. 2 1/2 cup Coconut, Almond, Cashew, Soy or Hemp milk (unsweetened) 1 Tbsp. Maple Syrup 1/2 cup chia seeds 1/2 tsp. finely grated orange zest 1 Tbsp. Raw Cacao powder 1.  In a 1-quart jar, combine the milk with the maple syrup.  Close the jar and shake to combine  Add the chia seeds and orange zest, then close the jar and shake well.  Refrigerate until the mixture is very thick and pudding-like, at least 4 hours or overnight, shaking or stirring occasionally.  Serve the pudding in bowls. Serve with: orange, tangerine or clementine sections. Flourless Peanut Butter Cookies

Hey folks how are you all?!  I hope super fantastic!  If not these amazing peanut butter cookies may just do the trick.  They are super easy to make, and take a very small amount of time.  Hey-isn't that great?  Totally kid friendly and there is no dairy, no gluten and they are Vegan!  Naturally.  I cannot take credit for this recipe, as a friend passed it along to me.  My friend's cousin is Celiac and has been since a small child, and she loves these.  My friend jokes that her husband is Italian and hates anything GF and loves these as well.   Now I made them with Dark Brown sugar instead of the Light Brown sugar it called for (cuz that's all I had in my kitchen).  Totally a BAD move.  That made them taste only ok, even though I ate five anyways.  Ugh.  Sweets in my house no matter what they taste like, I will eat them anyways. Pimp Your Nutella-Not Just A Spread For Your Bread

Hello fellow readers! Exciting news.  Some may already know, and others may be curious...but Nutella is gluten-free and wheat-free.  I never thought that this spread would be, but I did notice a lot of recipes, NYC GF bakeries like Tulu's GF Bakery and others using Nutella as part of their additions on their cupcakes, cakes and cookies!  Exciting huh? Pimp Your Nutella-10 ways 1. A spread for your bread 2. A dollop in your coffee with a candy cane=chocolate mint coffee 3. As frosting for your cupcake 4.  As an ingredient in your raw balls=Seeds, nuts, honey or dates and nutella.  Roll into balls and freeze for 4 hours.  Keep candies in the freezer and take out to eat as a treat. 5.  As a dip with apples 6.  Sandwiched between banana slices 7.  With your celery (as a dip) 8.  To bake with 9. GF Marshmallow Fondant Recipe

**Pic taken from Pinterest by ClockworkLemon Oh My God.  I'll say it again because I am so excited.  Oh My God.  I found the coolest recipe on Pinterest on how to make marshmallow fondant.  For those of you who do not know what fondant is, its the sugary professional icing on cupcakes and wedding cakes and well all kinds of cakes that is hard and smooth.  All those amazing cakes you see that have people or purses or cakes made into purses, Tiffany boxes, Chanel bags etc.  It's that hard icing that is rolled out like a sugar cookie.  A little more temperamental then regular icing and also more time consuming.  But if you are into fondant on your cakes and cupcakes then this recipe is for you.   I have also had a hard time finding out if boxed fondant by Wilton is in fact gluten-free, so I have stopped using it.  Now that I have found this marshmallow fondant that literally just uses food coloring and that's optional, confectio...

Gail Simmons Ginger Poached Pears

**Found in December, 31st issue of Us Magazine Yum!  What a treat, and so low cal!! Ginger Poached Pears with Vanilla Frozen Yogurt 3 cups port wine 2 cups water 1/2 cup sugar 2 cinnamon sticks 1 tsp. vanilla extract 2 slices peeled fresh ginger 1 lemon, halved 4 medium pears, ripe but firm 1 quart vanilla frozen yogurt 1/4 cup candied ginger, sliced (if you cannot find gluten-free, then candy them on your own.  I may even have a recipe on how to candy ginger and/or fruit on my site) 1/4 cup slivered almonds 1.  In a medium saucepan, combine wine, water, sugar, cinnamon, vanilla and fresh ginger.  Squeeze in lemon juice.  Bring to a boil. 2.  Meanwhile, cut off bottoms of pears with a paring knife.  With an apple corer, remove cores.  Peel peas, leaving stems intact. 3.  Place pears in poaching liquid and reduce heat to low.  Simmer for 10-12 minutes until tender, stirring occasionally.  Tur...

So on a few random nights I came home from work wanting a chocolaty snack, and immediately thought of those recipes on the back of the Chex cereal boxes, but of course and each and every time I went to make one, I was missing a few of the ingredients and I didn't want to involve the oven (that always seemed like a chore I didn't wanna partake in-baking dessert-on a week night-ugh).  So I decided to make my own Chex Party Mix versions solely using the microwave and let me tell you they were divine.  All I did was use which ever Chex cereal I had during that time and added my own super delicious ingredients and popped it into the microwave.  Super fab, super quick...craving tackled. Gingerbread Chocolate Cupcakes

What else am I going to do being stuck inside all day due to Hurricane Sandy's arrival...BAKE, bake and bake!  In the event we loose electricity I would like to have some homemade sweets lurking.  So yesterday while waiting on a 45 minute grocery check-out line I grabbed a Betty Crocker Devil's Food chocolate cake GF mix and two boxes of confections sugar and figured that would definitely do. Although...I like to make my own icing-nothing store bought because it gets soft and it tastes so artificial, so I (uh oh, lights just flickered big time-that made me nervous)!...like to make Magnolia's recipe for Buttercream icing. Deep Decadent Chocolate Butterscotch Brownies

**Pardon the hole marks in the brownie, I used shish kebab sticks to make sure the batter was done.
