A Day In My Paleo Life

Hello Lovelies, Many of you have been asking me what my meals look like on an average week while leading the Paleo lifestyle, so I have decided to create a post to answer all of your juiciest questions.  As I have mentioned in previous posts I do not think this diet is easy, but it's also not impossible and if I can do it then you totally can!! .  I am often in the kitchen and have to have foods prepared ahead of time or I am shit outta luck, since I can't go to processed or grain. (That part is annoying). Yesterday I got amazing news from my doctor that my deficiencies like my Anemia and Vitamin D deficiency are actually reversing for the first time in two years!  My reflux and Eczema has subsided dramatically and my hair is growing.   I really think yesterday was the best day of my life since getting diagnosed with Anemia and it's been a long time.  So now that I know all of my efforts are working and I must stay on it.  Prior to finding out this terrific news I

Pickled Deviled Eggs

Hello Lovelies! I'm not addicted to deviled eggs or anything, but I do love making healthy versions for breakfast .  It's sort of become this fun project I do either in the morning before work or at night.   Making these healthy creations gets me excited for breakfast!!  And I don't know many excited to eat breakfast, especially in New York City, the heart of stress, chaos and time suckage, where those walking the streets are like Zombies at 8am racing to the nearest Starbucks for their triple Venti Latte.   So it's really important that we do eat breakfast, it will set the tone of the day.  And I'm not just talking about your boring hard boiled eggs with a coffee-and down that faster then life itself and head into a meeting, setting your Monday totally off, and completely starved by lunch time.  Na…I'll pass on that scenario, and take getting creative in my kitchen to set the day. Nom Nom Paleo Cookbook

Hello Lovelies! When I was initially told I had to lead a strict Paleo lifestyle to repair the lining of my stomach that going gluten-free just did not heal, I thought.  O-M-G-What am I going to eat?  I was plagued by this.  And it reminded me of my initial days going gluten-free.  Not to mention using my creativity would be very hard with Paleo.  Or so I thought… After doing a google research on Paleo Lifestyle Blogs I came across a blog called Nom Nom Paleo .  Her name was Michelle Tam.  And her husband Henry Fong.   They were able to not only feed their family a Paleo lifestyle but thrive.  I was intrigued.   Her website made me remember that you can be creative with anything you put your mind to.  If you have the creativity gene like I do, then you know it never shuts itself off.  With that said, I found a few ideas from her website that guided me into my new Paleo lifestyle.   Score! Guacamole Cilantro Deviled Eggs

Hello Lovelies! I think Spring is in the air!! Can I get a drum roll please?  Or a Whoop Whoop!?  That's awesome!!!!! I can hear it all the way from here.  I knew you'd be in the spirit. Following a strict Paleo lifestyle can sometime be boring-I hate to say it, but if you don't have your creative thinking cap on- you may end up with the same breakfast every morning.  Usually I'll have a smoothie and some hard boiled eggs for protein, but ugh, hard boiled eggs can be bland.   I needed some pizazz, ya know?  Wanted to brighten up my life with taste. Baked Apple Tomato Basil Tower

Hello Lovelies! Happy weekend, happy sunshine if you are here in the Big Apple!  It's gorgeous out!  The sun is warm, and the farmer's markets are buzzing with New Yorker's itching to catch some rays.  I found myself at my happy places yesterday, both the Farmer's Market and Barnes and Noble in Union Square.   I bought Daikon Radishes, Sunchokes, Tomatoes, fresh Basil and Empire Apples.  And I only spent $18!! I wasn't even planning on buying the tomatoes, but I hadn't had lunch yet, and those juicy red ones were just calling out my name!   It was strange, I suddenly needed to have a tomato.  So of course fresh basil would naturally go with.  I left thinking lunch would be a Caprese Salad minus the dairy.   But when I got home I was thinking Baked Apples.  So I decided to combine the two.  It sounds odd to pair a sweet and tart baked apple with tomatoes and Basil, but my instincts kept telling me this would be delicious.   Something about th

Delicious Date Eclairs

Who's ready for a sweet treat that's better then chocolate cake and half the calories?  I knew I'd catch your eye!! It's gluten-free, vegan, dairy-free, Paleo and truly amazing!! So this is a sweet treat.  I made them for myself and a friend.  And yes they are small, and we each only had one, and one is all you need to savor the sweet sensation of this fruitful combination.   I compare it to a chocolate Eclair pastry in an Italian cafe.   No need for pastries this time my friends, this little nugget was just delicious on its own.  My friend Michelle even said, omg this is so good. So let's get to the goodies shall we?   This baby is easy to make .   Only has 3 ingredients.  And will seriously wow your friends, family, parents, husband, wife, dog and cat. Gluten-Free Chocolate Lover

Hey Lovelies! I love chocolate.  This should not come as a shocker, since I love sugar and often post about it.  And while eating chocolate every day is probably not your best bet, there is no reason we can't enjoy it on occasion. So what chocolates are gluten-free?  Having Celiac Disease or any allergy requires us to always read the ingredients and do the research online.  Often enough the ingredients may look safe, but in actuality are not. With that said, I would hate for you to buy a brand that doesn't suit your gluten-free needs.  I cannot bear to see another person get glutenized.   I cannot bear to see another fellow celiac feel deprived and cheat because they can't find a suitable chocolate brand that is gluten-free.   It's just so wrong. I'm always on the hunt for great chocolate.  And I have been doing a lot of taste testing, maybe a bit too much.  So now it's time to report.  Buckle your  seat belts!  You are in for a wild chocolaty ride.
