123 Gluten-Free Sugar Cookie Mix






These mixes are fantastic!  As far as gluten-free mixes go, these are awesome.  I love them all.  I served these at a party and no one could tell the difference.





Baking mixes are great to cook with because it makes baking easy.  All I had to do was add the butter and eggs! The only time consuming part is when you have to refrigerate the dough.  But it's easy to roll out and use which ever cookie cutter you want!  This was the first time in all of my celiac life that I made cut out sugar cookies.  Finally.  I thought I was going to have to throw away my cookie cutters.  I thought that cut out shaped cookies was a thing of the past.  Just as I was about to give up I made 123 Gluten-Free Sugar Rolled and Cut out Cookies.  Miss no more.  123 Gluten-Free came to the rescue.

This product is the collaboration of a mother and daughter team out of Cleveland, Ohio.  These products are not only Gluten-Free, but Wheat free, soy free, corn free, dairy free, peanut free and tree nut free.  And they taste fantastic.

123 Gluten-Free's motto is "Easy to make, Can't beat the taste!"  I say-So true!!!

Now don't go thinking that all sugary sprinkles are gluten-filled.  Some are actually Gluten-Free!! Just call the number on the back of the product if you are concerned.  : )

Royal Icing recipe:

3 Tablespoons Meringue Powder
4 Cups sifted Confections sugar aka Powdered sugar
6 Tablespoons water
Beat all ingredients at low speed for 10-12 minutes at high speed until icing forms peaks.
Yields: 3 cups

**For stiffer icing use less water.

Sometimes I feel like there are days only chocolate would understand.  And following a strict Paleo diet does not allot for chocolate eating.  Especially chocolate with added dried cane sugar.  And especially in abundance.  Of course special occasions allot for this type of activity, but today is not that day. Magnolia Bakery-Cream Cheese Frosting

Another amazing frosting recipe from Magnolia!  I swear by these recipes, this is my go-to book for icing when I bake!! 1 pound (two 8-ounce packages) cream cheese, softened and cut into small pieces 6 tbsp. unsalted butter, softened and cut into small pieces 1 1/2 tsp. pure vanilla extract 5 cups sifted confectioners' sugar In a large bowl, on the medium speed of an electric mixer, beat the cream cheese and butter until smooth, about 3 minutes.  Add the vanilla and beat well.  Gradually add the sugar, 1 cup at a time, beating continuously until smooth and creamy.  Cover and refrigerate icing for 2-3 hours, but no longer, to thicken before using.
