The Secret To Perfect Sugar-free Pancakes

Sounds crazy right?  Like it can't be done?  Like there must be hidden sugar in here somewhere?  Like there is a catch? The way I see it-When there's a will, there's a way. Detox diets can be restricting, but… It can be done.  And it can be done and taste delicious!  Isn't that what life is all about? Why should you deprive yourself right?   Why can't you enjoy whatever lifestyle you choose, right?   Or whatever lifestyle chooses you... Why can't your food taste good gluten-free, sugar-free, dairy-free, nut-free, soy-free yada, yada, lots of free's-why the heck not? In this recipe I used sugar-free vanilla extract , Liquid Stevia (the real kind you get at health food stores, not the kind that is cut with additives-don't be fooled by marketing!  Read ingredient labels). I also used dessert spices like Nutmeg and Cardamom. And I also used fruit, because fruit sweetens up everything, naturally!  I played with two...

How To Make Killer Oozy Blueberry Pancakes

Hi, my name is Julie, I am 37 years old and I have an addiction to Pancakes. Sugar-free, Gluten-free, Dairy-free, Soy-free, Nut-free Pancakes. I love Pancakes.  Let me count the ways. They say the first thing to do is to admit the problem. This is your brain.   This is your brain on Pancakes.  Any questions? I don't know where I lost control, but I did.   It started out so innocent.   I was building a recipe for my blog that would fit into my detox diet from my doctor.   It needed to be sugar-free, dairy-free, gluten-free and nut-free and Soy-free.  To be honest, I never thought a pancake could defeat me, for heavens sake it's not chocolate! Chocolate always defeats me…It's always 10 bars later and I'm like WTF happened?!-But that's chocolate -And chocolate is like that bad boyfriend that keeps you coming back for more, luring you in with it's sweet addiction and then leaving you by the side of the road to pick up the pie...

It's so EASY to make!! So easy, that often I make two or three of them before bed, and the prep is done in 10 minutes! You can load it with t...

2 Fabulous Ways To Enjoy Kale

So obviously from the title of this post you can tell that I am LOVING Kale.  It's a green veggie which means it has tons of Vitamin B and folate and is not as sugary as some other veggies like carrots and tomatoes.  There are so many ways to enjoy Kale and it doesn't take a lot of work.  You can saute it or roast it in under 15 minutes!   One of my favorite dishes at Beauty and Esssex a hot spot trendy restaurant located on the Lower East Side of Manhattan has a gluten-free menu and it is divine!  It's so creative and tasty.  My favorite salad dish there is a Kale salad.  They use this creamy dressing (gf of course!) and sliced green apples to compliment the bitterness of the Kale.  OMG it's so good.  So that got me thinking that I wanted to introduce Kale into my weekly home menu's. I have eaten Kale as a side dish for dinner and as part of my breakfast.  YUM!! Sauteed Kale with Feta (cook uncovered) Copyright©2012 Reci...

Cinnamon French Toast with Honey-Vanilla Mascarpone

Another amazing recipe must have for your gf kitchen.  Now, let me remind you that this amazing writer does not write about gf, but her recipes are beyond the call of amazing, so I have converted them. According to Clodagh, French Toast is her all-time favorite brunch dish, especially when made with Brioche.  If you don't have Brioche, then just use good-quality white bread.  If you aren't a fan of cinnamon, then try some freshly grated nutmeg.  At her cafe, they also serve this with crispy bacon. Now if you are gluten-free try my favorite brands of GF breads such as Udi's , Rudi's , Katz GF Challah , Katz or Canyon Bakehouse . For the french toast 2/3 cup milk 4 eggs 2 tsp. ground cinnamon 8 slices of gf bread 1/2 stick of butter For the honey-vanilla mascarpone cream 3/4 cup + 2 tbsp. mascarpone 2 tbsp. honey 1/2 tsp. vanilla extract Put the milk, eggs, and cinnamon in a bowl and beat well.  Soak the bread slic...

Naomi Judd's Fav Pancake Recipe

**From the April 2011 issue of Us Magazine There is nothing like getting a great celeb recipe from a juicy gossip magazine.  Sometimes I see these mouthwatering recipes, but they are not gluten-free.  Bummer, but not really, simply convert these recipes using a flour that is suitable for you!  The worst that happens?  It doesn't work, and then you try again...but instead to make it easier for you I will convert it for you! Sweet success!  Turns out that Naomi Judd one-half of legendary mother-daughter country music duo The Judds-also whips up hits in the kitchen.  "My grandkids will eat my pancakes anytime, day or night!" she tells Us.  "They're easy to make and always satisfying." Judd, 65, who is starring with daughter Wynonna, 46 in the reality show "The Judds" (premired on OWN: The Opray Winfrey Network April 10th, 2011), shares her recipe with Us.  (article written by Amy Vinciguerra) Naomi's Blueberry Pancakes 2 eggs, sepa...

Berry Ricotta Pancakes

**found in Glamour Magazine, May 2011 Nothing beats a super amazing gluten-free pancake! Right?  Now of course, this recipe I found was not designed gluten-free.  I just revised it to compliment someone like me, and someone like you. I must say the picture of these babies in my fashion magazine, made my mouth water.  I felt I needed to spread the LOVE.  Gluten-free love that is.  ; ) Just imagine a pancake filled with berry and ricotta.  Delicious! **pic is hard to see, but AMAZING! Sweet Quinoa

**Altered recipe.  Original recipe from  Martha Stewart Magazine-GF section Makes 2 cups Going gluten free can be tough, because although we extract the bad grains, we often forget to incorporate back in, the good grains.  Quinoa is an important and high fiber grain that all celiac's should include in their diet.  Often suggested as a plain and tasteless, adding berries, dried fruits and spices adds a kick. I altered this recipe by changing the sugar source and the milk source. 2 cups non-dairy milk or milk 1 cup Quinoa rinsed 3 tbsp. Maple Syrup 1/8 tsp. ground cinnamon 1 cup (1/2 pint) fresh blueberries (add more for more servings on all ingredients) 1.  Bring milk to a boil in a small saucepan.  Add quinoa, and return to a boil.  Reduce heat to low, and simmer, covered, until three-quaters of the milk has been absorbed, about 15 minutes. 2.  Stir in maple syrup and cinnamon.  cook, covered...
