Cinnamon French Toast with Honey-Vanilla Mascarpone

Another amazing recipe must have for your gf kitchen.  Now, let me remind you that this amazing writer does not write about gf, but her recipes are beyond the call of amazing, so I have converted them.

According to Clodagh, French Toast is her all-time favorite brunch dish, especially when made with Brioche.  If you don't have Brioche, then just use good-quality white bread.  If you aren't a fan of cinnamon, then try some freshly grated nutmeg.  At her cafe, they also serve this with crispy bacon.

Now if you are gluten-free try my favorite brands of GF breads such as Udi's, Rudi's, Katz GF Challah, Katz or Canyon Bakehouse.

For the french toast
2/3 cup milk
4 eggs
2 tsp. ground cinnamon
8 slices of gf bread
1/2 stick of butter

For the honey-vanilla mascarpone cream
3/4 cup + 2 tbsp. mascarpone
2 tbsp. honey
1/2 tsp. vanilla extract

Put the milk, eggs, and cinnamon in a bowl and beat well.  Soak the bread slices in the milk and egg mixture for a couple of minutes.

While the slices of bread are soaking, put the mascarpone, honey and vanilla extract in a bowl and mix well together.

Melt the butter in a skillet and fry the egg-soaked slices of bread over medium heat until they are a golden color on each side.

Serve the French toast with a spoonful of mascarpone cream.

Sometimes I feel like there are days only chocolate would understand.  And following a strict Paleo diet does not allot for chocolate eating.  Especially chocolate with added dried cane sugar.  And especially in abundance.  Of course special occasions allot for this type of activity, but today is not that day. Magnolia Bakery-Cream Cheese Frosting

Another amazing frosting recipe from Magnolia!  I swear by these recipes, this is my go-to book for icing when I bake!! 1 pound (two 8-ounce packages) cream cheese, softened and cut into small pieces 6 tbsp. unsalted butter, softened and cut into small pieces 1 1/2 tsp. pure vanilla extract 5 cups sifted confectioners' sugar In a large bowl, on the medium speed of an electric mixer, beat the cream cheese and butter until smooth, about 3 minutes.  Add the vanilla and beat well.  Gradually add the sugar, 1 cup at a time, beating continuously until smooth and creamy.  Cover and refrigerate icing for 2-3 hours, but no longer, to thicken before using.
