So obviously from the title of this post you can tell that I am LOVING Kale. It's a green veggie which means it has tons of Vitamin B and folate and is not as sugary as some other veggies like carrots and tomatoes. There are so many ways to enjoy Kale and it doesn't take a lot of work. You can saute it or roast it in under 15 minutes!
One of my favorite dishes at Beauty and Esssex a hot spot trendy restaurant located on the Lower East Side of Manhattan has a gluten-free menu and it is divine! It's so creative and tasty. My favorite salad dish there is a Kale salad. They use this creamy dressing (gf of course!) and sliced green apples to compliment the bitterness of the Kale. OMG it's so good. So that got me thinking that I wanted to introduce Kale into my weekly home menu's.
I have eaten Kale as a side dish for dinner and as part of my breakfast. YUM!!
Sauteed Kale with Feta (cook uncovered)

In a saucepan over low to medium heat add 2 tablespoons of oil mixture (see below)
2 tbsp Olive oil or 1 1/2 tbsp. Olive Oil+1/2 tsp. Truffle Oil
salt and pepper to taste or garlic salt-but use very little
Cook for about 1 1/2 minutes and then add 2 tsp. crumbled feta cheese. If you can help it crumble the feta out of the clumps and pour into kale mixture.
Cook again for a minute or two stirring constantly or until feta has melted into the Kale.
Serve hot.
You can take the above recipe as is or serve it with eggs and beets on top.
I used that as a bed then I added a dollop of Fage Greek yogurt and piled on 2 hearty sunny side up eggs and sandwiched it with a few canned beets. And I almost forgot! I added a sprinkle of dried dill leaves atop of the Greek yogurt. Fresh dill would have been even better. It's definitely a favorite breakfast of mine and it's so healthy.
Roasted Kale with Truffle Oil

Another great way to make Kale is roasted in the oven. I simply pour the bag of Kale in a bowl (washed of course) and add a little bit of olive oil+ truffle oil, pepper and garlic salt to taste. I mix it well and put it on a cookie tray lined in foil with Pam spray. Pop that in the oven at 400 degrees for about 15 minutes or 420 degrees at about 10 minutes give or take depending on your oven.
I love when it comes out crunchy! Serve that in a bowl hot or luke warm and it almost tastes like a crunchy kale chip.
