Naomi Judd's Fav Pancake Recipe

There is nothing like getting a great celeb recipe from a juicy gossip magazine.  Sometimes I see these mouthwatering recipes, but they are not gluten-free.  Bummer, but not really, simply convert these recipes using a flour that is suitable for you!  The worst that happens?  It doesn't work, and then you try again...but instead to make it easier for you I will convert it for you!

Sweet success!  Turns out that Naomi Judd one-half of legendary mother-daughter country music duo The Judds-also whips up hits in the kitchen.  "My grandkids will eat my pancakes anytime, day or night!" she tells Us.  "They're easy to make and always satisfying." Judd, 65, who is starring with daughter Wynonna, 46 in the reality show "The Judds" (premired on OWN: The Opray Winfrey Network April 10th, 2011), shares her recipe with Us.  (article written by Amy Vinciguerra)

Naomi's Blueberry Pancakes

2 eggs, separated
1 1/2 cups sifted GF All-Purpose-Flour
2 1/4 tsp. baking powder
1/8 tsp. Xanthan gum (will bind the pancakes together)
3 tbsp. sugar
3/4 tsp. salt
1 cup buttermilk (this makes everything so much better!)
3 tbsp. butter, melted
1 cup fresh or frozen thawed blueberries

In a small bowl, beat egg whites until stiff; set aside.  In a separate bowl, sift together flour, baking powder, sugar and salt.  Beat egg yolks in a medium bowl; add buttermilk and melted butter.  Stir in egg mixture into dry ingredients; mix until batter is smooth, and stir in blueberries.  Fold in beaten egg whites.  Bake on hot greased griddle.  Makes 12 pancakes.

Pls also note that it is best to use an electric mixer to mix this together, you will get a smoother finish.

Hot Chocolate Coffee

Sometimes I feel like there are days only chocolate would understand.  And following a strict Paleo diet does not allot for chocolate eating.  Especially chocolate with added dried cane sugar.  And especially in abundance.  Of course special occasions allot for this type of activity, but today is not that day. Magnolia Bakery-Cream Cheese Frosting

Another amazing frosting recipe from Magnolia!  I swear by these recipes, this is my go-to book for icing when I bake!! 1 pound (two 8-ounce packages) cream cheese, softened and cut into small pieces 6 tbsp. unsalted butter, softened and cut into small pieces 1 1/2 tsp. pure vanilla extract 5 cups sifted confectioners' sugar In a large bowl, on the medium speed of an electric mixer, beat the cream cheese and butter until smooth, about 3 minutes.  Add the vanilla and beat well.  Gradually add the sugar, 1 cup at a time, beating continuously until smooth and creamy.  Cover and refrigerate icing for 2-3 hours, but no longer, to thicken before using.
