Bob's Red Mill Chocoate Cake

 What I love about mixes is that in 1/2 hour you can have a chocolate cake baking in the oven with barely any need for preparation.

If you haven't noticed I have an obsession with Cupcakes.  So I decided to make them into cupcakes.  Instead of the vanilla extract the mix called for I used Mexican Vanilla Extract, which adds a kick and a bit of spice.  And I also added gluten-free milk chocolate chunks and gluten-free White chocolate chunks.  I mixed it all in and poured the batter into cupcake molds.  Yum!

This mix looked so good, If I wasn't on a diet I would have licked the bowl.

I baked them at 350 degrees for about 35 minutes.

 
Mini cupcakes and large cupcakes.  Chocolate with oodles of milk choc. and white choc chunks.  You just can't beat that!  It hit the spot, since yesterday was my birthday I allowed myself just one.

Bob's Red Mill is one of my favorite brands.  I use their flours and all of their mixes.  They have a great website, their products are sold at my supermarkets and online, and I find their products very trust worthy.  I started using Bob's products right when I was diagnosed.  Now i'm talking about 4 years ago.  My gluten free lifestyle will always include Bob's Red Mill.

Hot Chocolate Coffee

Sometimes I feel like there are days only chocolate would understand.  And following a strict Paleo diet does not allot for chocolate eating.  Especially chocolate with added dried cane sugar.  And especially in abundance.  Of course special occasions allot for this type of activity, but today is not that day. Magnolia Bakery-Cream Cheese Frosting

Another amazing frosting recipe from Magnolia!  I swear by these recipes, this is my go-to book for icing when I bake!! 1 pound (two 8-ounce packages) cream cheese, softened and cut into small pieces 6 tbsp. unsalted butter, softened and cut into small pieces 1 1/2 tsp. pure vanilla extract 5 cups sifted confectioners' sugar In a large bowl, on the medium speed of an electric mixer, beat the cream cheese and butter until smooth, about 3 minutes.  Add the vanilla and beat well.  Gradually add the sugar, 1 cup at a time, beating continuously until smooth and creamy.  Cover and refrigerate icing for 2-3 hours, but no longer, to thicken before using.
