Nature Valley Roasted Nut Crunch Bars






Today I took a trip to Food Emporium on 31st St. and 3rd Avenue to do my weekly grocery shopping.  I usually go down all the aisles to check if anything gluten-free has hit my grocer's shelves and today I almost toppled into my shopping cart when I saw Natures's Valley Roasted Granola Bars GLUTEN-FREE in my cereal isle.  

They come in two flavors Peanut Butter Crunch and Almond Crunch.  I bought the Peanut Butter Crunch and I was surprised by the wonderfully sweet and salty taste.  They were extra crispy and crunchy and delightful against my palate.  This bar is a great snack.  Not only were there nuts but the bar was binded with sunflower seeds and sugary coating so it didn't crumble in my hands.  

These bars are also made from corn flour.

The only catch is that these bars are high in fat! 13 grams of fat, 190 calories and 180 grams of sodium.

  1. I find these bars way too sweet. The second ingredient is corn syrup, which explains the sweetness and stickiness. I would rather stick with a raw bar like LaraBars or make my own. I do give GM/Nature Valley thanks for continuing to expand their gluten-free selections.

Sometimes I feel like there are days only chocolate would understand.  And following a strict Paleo diet does not allot for chocolate eating.  Especially chocolate with added dried cane sugar.  And especially in abundance.  Of course special occasions allot for this type of activity, but today is not that day. Magnolia Bakery-Cream Cheese Frosting

Another amazing frosting recipe from Magnolia!  I swear by these recipes, this is my go-to book for icing when I bake!! 1 pound (two 8-ounce packages) cream cheese, softened and cut into small pieces 6 tbsp. unsalted butter, softened and cut into small pieces 1 1/2 tsp. pure vanilla extract 5 cups sifted confectioners' sugar In a large bowl, on the medium speed of an electric mixer, beat the cream cheese and butter until smooth, about 3 minutes.  Add the vanilla and beat well.  Gradually add the sugar, 1 cup at a time, beating continuously until smooth and creamy.  Cover and refrigerate icing for 2-3 hours, but no longer, to thicken before using.
