Popcornopolis



As most of you know popcorn for the "most part" is gluten-free.  I say most part in quotes, because sometimes you will find a brand that is not.  Especially when it is flavored.  But this gourmet brand is gluten free and it is called Popcornopolis!  Their flavors are great!! You have Caramel, Cheddar, Cinnamon Toast,  Kettle, Pecan Caramel, Almond Caramel, Sour Cream and Onion, Rocky Road and 20 more and counting!! All Gluten-Free!.  It's hard to find a lot of processed foods that have amazing flavor that are in fact gluten free.

Upon our arrival at the breakers we were given a large decorative basket of flavored popcorn.  Darn I thought, I def cannot have that.  Bummer I thought.  But after my brother devoured the Kettle flavor he ran to my room to tell me that this brand was gluten free!  All flavors.  I said yeah right Greg, are you trying to get me sick?  I really thought he was joking, but after reading the package, and seeing the big Gluten-Free cloud stamp I was relieved and very happy!



This popcorn by the way is sooo good it is addicting! You can order gift baskets and choose the selections, create your own or just enjoy on its own.  Their flagship store is in Hollywood and there are many other locations and other markets that carry their products.  You can even sign up for their newsletter!  Yeah baby!

I would like to give a shout out to my 15 year old brother Greg, who is now learning all about being gluten-free because of me.  He is always looking out for me and I give him props for finding this great product and informing me!  Yeah Greg!! You go guy!

Hot Chocolate Coffee

Sometimes I feel like there are days only chocolate would understand.  And following a strict Paleo diet does not allot for chocolate eating.  Especially chocolate with added dried cane sugar.  And especially in abundance.  Of course special occasions allot for this type of activity, but today is not that day. Magnolia Bakery-Cream Cheese Frosting

Another amazing frosting recipe from Magnolia!  I swear by these recipes, this is my go-to book for icing when I bake!! 1 pound (two 8-ounce packages) cream cheese, softened and cut into small pieces 6 tbsp. unsalted butter, softened and cut into small pieces 1 1/2 tsp. pure vanilla extract 5 cups sifted confectioners' sugar In a large bowl, on the medium speed of an electric mixer, beat the cream cheese and butter until smooth, about 3 minutes.  Add the vanilla and beat well.  Gradually add the sugar, 1 cup at a time, beating continuously until smooth and creamy.  Cover and refrigerate icing for 2-3 hours, but no longer, to thicken before using.
