Grilled Halibut and Fresh Mango Salsa

2 cups diced seeded plum tomatoes
1 1/2 cups diced peeled mango
1/2 cup onion
1/2 cup chopped fresh cilantro
2 tbsp. fresh lime juice
1 tbsp. cider vinegar
1 tsp. salt, divided
1 tsp. black pepper, divided
2 garlic cloves, minced
4 (6-0z) halibut fillets
1 tbsp. olive oil

1.  Prepare grill

2. Combine the first 6 ingredients in a medium bowl.  Stir in 1/2 tsp. salt, 1/2 tsp. black pepper and garlic.

3. Rub halibut with oil; sprinkle with remaining 1/2 tsp. salt and 1/2 tsp. pepper.  Place fish on grill rack, and grill 3 minutes on each side or until the fish flakes easily when tested with a fork or until desired degree of doneness.

4.  Serve with mango salsa.

Yield: 4 servings.  (serving size: 1 fillet and 3/4 cup salsa) calories: 295

Magnolia Bakery-Cream Cheese Frosting

Another amazing frosting recipe from Magnolia!  I swear by these recipes, this is my go-to book for icing when I bake!! 1 pound (two 8-ounce packages) cream cheese, softened and cut into small pieces 6 tbsp. unsalted butter, softened and cut into small pieces 1 1/2 tsp. pure vanilla extract 5 cups sifted confectioners' sugar In a large bowl, on the medium speed of an electric mixer, beat the cream cheese and butter until smooth, about 3 minutes.  Add the vanilla and beat well.  Gradually add the sugar, 1 cup at a time, beating continuously until smooth and creamy.  Cover and refrigerate icing for 2-3 hours, but no longer, to thicken before using.
