GF Marshmallow Fondant Recipe

Oh My God.  I'll say it again because I am so excited.  Oh My God.  I found the coolest recipe on Pinterest on how to make marshmallow fondant.  For those of you who do not know what fondant is, its the sugary professional icing on cupcakes and wedding cakes and well all kinds of cakes that is hard and smooth.  All those amazing cakes you see that have people or purses or cakes made into purses, Tiffany boxes, Chanel bags etc.  It's that hard icing that is rolled out like a sugar cookie.  A little more temperamental then regular icing and also more time consuming.  But if you are into fondant on your cakes and cupcakes then this recipe is for you.  

I have also had a hard time finding out if boxed fondant by Wilton is in fact gluten-free, so I have stopped using it.  Now that I have found this marshmallow fondant that literally just uses food coloring and that's optional, confections sugar, water and marshmallows I am in heaven.  I cannot wait to use this on my cupcakes!

    Hi, I am making a gluten free cake and want to use this marshmallow recipe, are you able to confirm if all marshmallows are gluten free? Thanks in advance. Laura

      I CANNOT confirm that ALL marshmallows are gluten free. You will have to call the manufacturer. There should be a phone number on the back of the package.

    3. Hi Michelle, I never stated that all marshmallows were gluten-free. As I suggest to anyone, calling the manufacturer is the best process to find out what is gluten-free and what isn't, and how the manufacturing process takes place.

    1. I'm sorry I don't know. You may want to call Wilton and see if their Fondant is gluten-free, but I am not sure that it is. This recipe I found on Pinterest, and is a homemade version of fondant.

Magnolia Bakery-Cream Cheese Frosting

Another amazing frosting recipe from Magnolia!  I swear by these recipes, this is my go-to book for icing when I bake!! 1 pound (two 8-ounce packages) cream cheese, softened and cut into small pieces 6 tbsp. unsalted butter, softened and cut into small pieces 1 1/2 tsp. pure vanilla extract 5 cups sifted confectioners' sugar In a large bowl, on the medium speed of an electric mixer, beat the cream cheese and butter until smooth, about 3 minutes.  Add the vanilla and beat well.  Gradually add the sugar, 1 cup at a time, beating continuously until smooth and creamy.  Cover and refrigerate icing for 2-3 hours, but no longer, to thicken before using.
